WHICH HERBS AND PLANTS ARE IN THE CLASSIC?
Why is drip honey a local alternative to manuka?
We cut the honeycombs out of their wooden frames and let them slowly drip dry over several days—without any spinning or heating. This exceptionally long contact time with the combs is crucial: Scientific studies* show that as a result, drip-harvested honeys can have a pollen content more than 40 times higher than that of average honeys. (This is also why our drip-harvested honey crystallizes into its natural creamy form after just a few days or weeks.)
In addition, fine propolis components as well as biologically active flavonoids and phenolic compounds are released during the drip honey harvest. This saturation with secondary plant substances is associated in the specialist literature with significantly increased antibacterial activity. The result is an authentic local alternative to imported manuka honey!

Notes
Store in a dry place, protected from light and heat.
Drip honey contains a higher proportion of valuable components such as pollen, propolis, and wax, which is sometimes visible to the naked eye. Due to its higher pollen content, (crystallized) drip honey is somewhat more sensitive to unfavorable storage conditions above 20 degrees: If in doubt, honey can be frozen without any problems—just like in a beehive during winter.
Natural honey like ours crystallizes sooner or later. As a drip honey, it remains naturally creamy. If you like, you can add honey with max. 40 degrees liquefy again: Below 40 degrees, all valuable ingredients are retained.
